Buying spiced rum is cool, but you do know that you can make your own with the spice profile you prefer and none of the sugar, right? This simple technique for making spiced rum and incorporating it into a Dark and Stormy is one of my favorite little tricks.

    Made this for Thanksgiving. I found the spice to be a bit ‘raw’ tasting for about the first 3 days (24-hour marination). Then it settled down. After about a week, the flavor changed and it became a bit insipid. So, my conclusion is there is a window. Pretty darn good then. Thanks!
