David from Germany wrote to me about six months ago asking if there was a video demonstration of the “underhanded pour” I describe on page 190 of The Bar Book. Well, that right was right as I was deep in the process of opening my own bar, so naturally I let his email sit in my inbox for the remainder of the year (sorry, David!)
But it was always my intention to put together a video for him once I had the time. So about two weeks ago I bought myself a GoPro as a little reward for getting through the holidays (man, was it busy at work) and taught myself some (very) basic video editing. And the first thing I did was finally answer David’s question!

I sometimes try to use the underhanded pour but most of the time I change to the regular pour, as I am lacking precision with the underhanded one. Especially when pouring small quantities. Do you have any additional tips for that?
Use your thumb to press down on the neck of the bottle and give yourself some additional precision. And it takes practice!
