I think the real bar manager at Red Agave might be a little miffed if she sees this, but at least they spelled my name correctly.

What a wonderful surprise and honor this morning! What a wonderful surprise and honor this morning! After working an incredibly busy shift last night, getting four hours of sleep and then driving down to Salem for our first staff training, I landed to the news that I’m up for Best Bar Mentor, and our beloved @pacificstandardpdx is up for Best New Cocktail Bar at the Spirited Awards at Tales of the Cocktail. 

Mentorship has always been one of the most important things to me, as I’ve been sharing everything I learn on my website for the past 19 years. 

And this is just the sort of morale boost we all needed at the bar, our little team has been working their asses off night after night to make Pacific Standard the best bar it can be.

Today’s the day! Last summer we used the roof of Today’s the day! Last summer we used the roof of the KEX hotel as an extension of Pacific Standard’s bar and kitchen but starting this afternoon, we are beyond thrilled to be opening our second bar in a year, the Sunset Room!

Open now for the summer, the Sunset Room is its own special place. With a brilliant and delicious summer food menu by @cheddahbunz and the most fun drinks by @reverendbanjo and me, we worked hard to create the sort of we all personally want to be during a gorgeous Oregon summer. 

I in particular am over the moon to be offering my childhood Disneyland favorite, DOLE WHIP. And as my good friend @sandwichesofhistory always says, we are able to “plus it up” with the addition of a delicious @diplomaticorum float. (I’m drooling as I write this)

The Sunset Room is open every day from 4PM until 11PM, and this hard-working team and I are so excited to see you!

Well it’s that time of year again as my calendar Well it’s that time of year again as my calendar reminds me that *twenty-seven years ago*, today I worked my first ever bartending shift. Twenty seven! Holy crap. Now it’s well over half my life spent working full time behind the bar. And while I’m down to three nights a week back there (I tell myself that all those years serving drinks 5-6 nights away makes up for this new schedule), I still don’t see this stopping any time soon. 

Pretty soon it’s going to be thirty years and I honestly don’t know what to do with that information. I’m going to be that little old man in a white tuxedo working the steakhouse and there’s a little clip at the end of the local news like “Can you believe this guy’s been making his signature dirty Martini since NINETEEN NINETY SIX?!”

So here’s to all you bartenders out there. I’m gonna celebrate tonight the same place I always do: behind the bar. Anyway, here’s some funny old pictures of me at work over the years. 🤘

Opening with a big splash and making the decision to be open until midnight, every day of the week, seemed like a nearly impossible project at a still-uncertain time this time last year. But it has been so worth it to see how positively the community - both local and beyond - has responded.

I took the new “Fluicer” flat juicer for a spi I took the new “Fluicer” flat juicer for a spin yesterday afternoon and put a little video up on my YouTube channel. Link to all my YouTube videos is in my profile!

This juicer is pretty darn cool and gets a lot more juice out of an orange than my regular enameled die cast one. I’ll be super curious to see how long it lasts before breaking (because if there’s one thing we know about hand juicers it’s that it’s never a question of *if* it will break, it’s *when*)

This weekend, we hiked to the site of a natural ca This weekend, we hiked to the site of a natural carbonated spring that I’d been wanting to see for quite some time. It’s also the site of an abandoned bottling plant and a building housing a former dry ice manufacturing facility.

I’ve never had the pleasure of drinking directly from a true natural sparkling water spring before, as they’re quite rare. Unfortunately for us, the spring wasn’t running - I’d imagine it relies on snow melt to fill the aquifer and we haven’t had much this year so I didn’t get to sample any of the water this time. 

But it was still very cool to see the yellow, sulfury pools of water near the spring. There are potentially a few ways water can become naturally carbonated but a number of them involve sulfur coming into contact with limestone. The one other time we experienced this sort of spring it had that tell-tale rotten egg/sulfur smell.

Valentine’s Day. In some ways I’m like “woof Valentine’s Day. In some ways I’m like “woof” and in other ways I’m like “awww”. But one thing I can agree with myself on is that getting together with someone you love (even if both people just happen to be you) and destroying a really beautiful and elegant seafood tower is absolutely the best way to spend Valentine’s Day. 

Our supremely talented kitchen team took our vision and rocked the hell out of it for tonight’s Inaugural Valentine’s Day Seafood Tower Extravaganza and I couldn’t be more proud. 

Local oysters, Oregon albacore crudo, Dungeness crab legs, giant prawns, and wakame salad served with champagne mignonette, fresh horseradish, lemon, garlic aioli, and spicy cocktail sauce. 📸: @littlezestypdx

CALLING ALL NACHOS AND WINGS LOVERS (okay and foot CALLING ALL NACHOS AND WINGS LOVERS (okay and football fans too I guess)

On one hand we have always felt strongly about *not* having TVs in bars because they have this habit of sucking the life out of human connection and that’s REALLY not something we need right now. 

But on the other hand there is a small handful of days when we LOVE having the ability to drop a screen down and fire up the projector because it really helps foster an atmosphere of nachos and hot wings and tomorrow is one of those times. 

We’re open regular hours with our regular menu BUT we are also serving these gorgeous nachos that I might have had a small hand in, as well as some classic Buffalo wings because that’s a requirement as well. 

And if you only want to come by for an hour to watch the halftime show that’s great too. You know I’m not a football guy but I’ll be there watching commercials and stuffing my face so come join me at the very least.

Menu and blog update! I wanted to explore one of t Menu and blog update! I wanted to explore one of those drinks I always got requests for back when I started tending bar, but never really paid much attention to: the Keoke Coffee. 

It seemed like there were a million coffee drinks back then: Keoke, Irish, Spanish, Mexican, Nudge. Not to mention all the cocktails that became extensions of themselves when coffee was added to them: B-52, BFK, Separator, and countless others I’ve since forgotten. 

The running joke among bartenders back them was that you didn’t really need to know a recipe because all you had to do was pour a bunch of liqueurs into a glass, add coffee and whipped cream, and smile. 

The Keoke Coffee falls into that middle era where it’s not old enough to garner respect from cocktail nerds and historians, and not new enough to have a credible paper trail. 

What we do know is that it hails from the late-1960s West Coast and so we felt that it was a perfect addition to our cocktail menu.

@teremana has been my new favorite tequila since t @teremana has been my new favorite tequila since they launched, so when they asked me if I wanted to #BringTheMana to my Añejo Tequila and Amontillado Sherry Eggnog this holiday season I responded with a resounding YES. 

I’ve got got some here with me on our coastal Christmas getaway, and will be cracking into it tomorrow night and toasting you all while we open presents and dive into some really bad/good Hallmark movies.

From the humble first years of Repeal Day in Eugene, Oregon, to getting to bartend alongside Dale Degroff and Chris Hannah for a thousand people in Washington, D.C.
